烹飪班~ 葡國雞

西式烹飪班~ 葡國雞



 






 


材料:


光雞件~ 1 隻


薯仔~ 2 個


洋葱~ 1 個


蒜茸~ 2 粒


咖喱粉~ 1 湯匙


什香草~ 1 湯匙


磨菇~ 3 安士


花奶~ 半杯


上湯~ 1 杯


麵粉~ 2 湯匙


炒香椰茸~ 3 湯匙


 


調味:


鹽及胡椒粉少許


 


 


做法:


1.  光雞洗淨切件,用鹽及胡椒粉醃一陣



 






 


2.   燒紅鑊→ 下油→ 煎香兩面雞件備用


 


3.  薯仔去皮→ 切大件→ 放沸水內煲熟備用



 






 


4.  燒紅鑊→下油爆香香草→ + 蒜茸→ + 咖喱粉→ + 麵粉



 






 


→ +上湯 + 花奶拌勻→ + 洋葱→ + 雞件→ + 熟薯仔


→ + 磨菇 = 一齊同煲炆至滾起



 












 


5.  可上碟準備入焗爐



 






 


6.  椰絲慢火白鑊炒至散開一粒粒/微黃便可上碟



 






 


7.   將椰絲均勻鋪於葡國雞面上



 






 


8.   放入焗爐煱至金黃便完成



 





 




 


General Consideration:


 


*  可選用任何咖喱粉,是次是印尼 (黃薑粉較多)


顏色偏黃及較香。


 


*  咖哩粉的辣度,可取決其炒香的時間及其他調味。


(越爆香得久→ + 辣; + 花奶/椰汁→ - 辣)


 


*  薯仔可先泡油或煲熟,前者則較油膩,


目的同是確保薯仔不會炆至茸爛;


另可用一種紫色薯仔是不會炆至茸爛。


 


*  若使用新鮮雞,可用水代替上湯炆。


 


*   磨菇可用新鮮代替罐頭,味道可會更香濃。


 


*  洋葱建議勿使用表面的兩、三層,因為是不會轉軟身的,


可留回煲湯用。

    椰絲、椰汁放在甜品上,我無所謂。但用來煮餸,就唔對胃口!
    所以我會選擇這一碟!

    不過老師話唔落椰汁....
    就落椰絲.....都有椰香味.....
    如果我煮的話我都唔會落椰絲
    不過都會入焗爐焗一陣....
