西式烹飪班~ 紐西蘭烤羊扒
材料:
紐西蘭羊扒~ 1 磅
麵包糠~ 適量
蒜泥~ 1 個
迷迭香~ 3 湯匙
芥末~ 2 湯匙
牛油~ 1安士
調味:
鹽及胡椒粉少許
橄欖油~ 1 湯匙
做法:
1. 迷迭香 (Rosemary) 洗淨
2. 用手撕去葉的部份
迷迭香撕去葉的份量~ 3 湯匙
3. 蒜頭連皮在中間打橫切開一半→ 放入預熱焗爐焗至金黃色
→ 壓成蒜泥 + 芥末 + 迷迭香 + 牛油 → Mixed up
4. 羊扒的表皮成格仔紋 ( 速使調味更易滲入)
但紋理要與牛肋骨不同方向→
再用鹽、胡椒粉及橄欖油醃一陣
5. 燒紅鑊→ 下油→ 略煎各面的羊扒 (除內彎肋骨位)
目的是鎖住肉汁
6. 將 3. 的醬料均勻搽入羊扒內外
7. 再用適量麵包糠蓋上一層
8. 再去除多餘的麵包糠
9. 預熱焗爐 200° ~ 10 mins
10. 以中火焗爐焗至所喜好的程度
11. 依據羊肋骨的肉位逐條切開
General Consideration:
* 烤焗時可留意羊扒的表面
若有燶位則用錫紙蓋面及降位
* 建議多條羊肋骨才使用烤焗方法
若單件的話會烤至乾身及流失肉汁

我唔食羊 o架!
回覆刪除不過我家主人鍾意食!所以都係與他出街食!
飲酒就飲得 o下,紅酒較少飲,怕糖份高,Beer 就日日最多飲一樽,最少飲一罐!
我們用膳,侍者多數把酒杯放在他面前!吃早餐,齋啡放他面前、給我 Holicks or 杏霜,次次都要我們自己更正。
我們係男女對調?!
