學整餅~ 芒果拿破崙千層酥
材料
酥皮麵糰:
低筋粉~ 180g
高筋粉~ 20g
淡牛油~ 25g
鹽~ 1g
冰水~ 110g
摺皮用油:
酥皮植物牛油片~ 150g
吉士忌廉餡:
吉士粉~ 50g
淡奶~ 125g
甜忌廉~ 63g
麵糰做法:
1. 低筋粉、淡牛油、冰水放入攪拌碗內,
用拌打器慢速打日成糰即可/用人手於桌面搓成一糰,
按壓稍薄入雪櫃冷藏~ 15分鐘。
2. 將麵糰取出包入牛油片,摺三折法一次。 3. 將麵糰轉 90度,輾薄重復做三折法三次, 中段要冷藏 10 mins。 4. 輾薄約 4 cm 厚,皮打孔後切割所需尺寸放於焗爐盆上。 5. 焗爐用 200 度預熱,烘焙~ 20 mins後冷卻備用。 吉士忌廉餡做法: 吉士粉與淡奶混合攪拌均勻, 再 +入已發打之甜忌廉拌勻即可。 造形: 熟酥皮切形後唧上吉士忌廉餡, 芒果肉按喜好層層相間即成, 亦可三層酥皮夾果肉成一件, 頂層亦可用吉士忌廉黏上喜愛的水果作點綴。 酥皮配上吉士忌廉芒果餡

我覺得做 12 件小更易 Handle
但做餅確實麻麻.......要攪人消貨
我親自送上門.....仲要威迫先得.....
依家啲人怕肥.....
更何況一堂都幾貴........夠我學 7....8 個餸
都是閒來約同事玩吓
我都係鍾意煮餸.......受惠及實際得多
