烹飪班~ 京葱牛肉

兩餸一湯烹飪班~ 京葱牛肉



 


材料:


京葱~ 1 棵


牛肉~ 4 両


蒜茸~ 2 粒


薑茸~ 2 片


 


調味:


鹽、糖各半茶匙


醬油 1 湯匙


生粉 1 茶匙


麻油、胡椒粉各少許


甜麵醬 1 湯匙




 







 


做法:


1.  牛肉切片放入調味 (少許蒜茸、少許糖、豉油)


理想是醃過夜。


2.  牛肉煮前再 + 鹽、麻油及胡椒粉


若用煎方法,則最後要 + 油醃。


3.  京葱洗淨後斜切備用。


4.  燒紅鑊下多油→ 牛肉泡油後取出隔油。



健康少油法:


燒紅鑊下油,將牛肉鋪平鑊內,見肉邊轉色即反轉→


再煎另一面→ 色轉上碟。


5.  清洗鑊→ 燒紅鑊→ 爆香薑茸、蒜茸→


再爆香京葱→ 下甜麵醬炒透牛肉→ 贊紹酒→ 上碟。


 


 


提示:


- 為健康做法,不建議用鬆肉/梳打粉,


醃肉類可用蒜茸/汁,亦有鬆肉作用。


- 醃肉先落糖,可保存肉味,再下調味時不會蓋過。


- 泡油是最穩陣的方法,但健康少油煮食,


宜用油鋪平煎半熟一面再煎另一面,


但在醃肉最後時要 + 少許油醃。


- 只適用於使用甜麵醬/海鮮醬/沙茶醬


不適用麵豉醬。


- 喜歡辣味,可 + 少許辣椒仔汁。


- 甜麵醬可選購於台灣食品的舖頭。


 


Learning Point:


-  蒜汁有鬆肉作用。


-  醃肉先落糖,能保存肉味。


- 用煎方法代替泡油,祕訣是要鋪平煎半熟一面再反轉,


勿反來反去,目的是鎖住肉汁。

  5. 買相好靚, 我第一次食京蔥爆牛肉是在上海館子, 吃過之後不再拒絕吃蔥了...
