烹飪班~ 香煎琵琶豆腐

賀年烹飪班


香煎琵琶豆腐


 





 


材料:


布包豆腐 2 件


蝦膠 3 安士


蛋白 2 隻


 





 


這味菜主要學習的是


如何制作蝦膠?


若是能掌握蝦膠的做法


便可制作多樣的小食及餸菜


如泰式蝦餅    蝦多士    粟米炸蝦球等


 


 


方法:


1.  蝦仁用牙簽挑去腸


用生粉及鹽醃一醃    再用水沖洗至清


用布吸乾所有水份/用乾布包好放入雪櫃抽乾水份


2.  蝦仁用刀身壓爛    再用刀背剁吓


若壓爛蝦仁份量的一半 


再混合另一半完整蝦仁一齊用刀背剁一陣


但不宜太蓉 否則無"趙"口  


所以仍保留小小的一粒粒蝦肉


3.  用鹽   糖   胡椒粉  麻油各少許調味 + 生粉 1 tsp 撈混


4.  蝦蓉用力撻在碗內至 ~20 多次至黏手為至


但不宜太多次   否則蝦膠會太韌太硬身


5.  撻好的蝦膠放入雪櫃  (不是冰箱) 內冷凍幾小時


6.  布包豆腐抹乾水    再壓碎放入冷凍後的蝦膠拌勻


份量若各一半左右    若豆腐太多宜加生粉增加黏性


7.  將豆腐蝦膠放入已抹油匙羹內達到匙柄位置


形態才仿似琵琶


8.  水滾後用中火蒸 ~ 6-7 分鐘取出


 





 


9.  待涼透後小心用刀刮起


10.  浸在蛋白液再黏上適量生粉    用油慢火煎至金黃色上碟


 





 


但個人不太喜歡混合豆腐的口感


這個只會嘗試學習做蝦膠來制作其他菜式
