賀年烹飪班~ 大蝦芝士伊麵

最後一課堂是教酒樓宴客的單尾菜

這味自家煮也很簡單

用來宴客也不失禮啊

 

 

材料：

大蝦~ 12 両

蒜茸~ 半個

芝士~ 3 兩

薑茸~ 1 湯匙

伊麵~ 2 個

 

 

做法：

1.  伊麵氽水 但只是拖水一陣

仍是硬骨便盛起待用

 

 

2.  大蝦去鬚   腸及蝦槍後洗淨 拌入適量鹽及生粉

 

3.   燒紅鑊    下 2 湯匙油煎大蝦兩面待用

 

4.  再燒紅鑊爆香薑茸及蒜茸

下伊麵拌勻及炒一陣

 

 

5.  再會入大蝦 + 上湯半杯 + 糖 + 鹽 + 贊紹酒 + 芝士

 

 

6.   放上錫紙盆 + 芝士上面

 

7.    預熱焗爐 10 分鐘

再用 200 度焗 10 分鐘

 

 

8.  待芝士溶後   便完成這半中半西的「大蝦芝士伊麵」

 

 

提示：

 

-  芝士用 Mozzarella 可有一絲絲的芝士口感

此多於焗 Pizza 用

-  大蝦勿煮太久    否則會變霉質

-  可改用斑塊代替蝦    但要加倍芝士份量

-  用牛油炒伊麵會更香濃美味

- 可 + 香草於芝士面   會更香濃美味
