西式烹飪班~ 吉列豬扒
材料:
梅頭豬扒~ 半斤
蛋~ 1 隻
麵粉~ 2 湯匙
麵包糠~ 適量
調味:
鹽、胡椒粉適量
做法:
1. 豬扒洗淨,首先用刀切斷旁邊白色的肉邊(筋),
大塊的大概 3-4 刀;細塊的大概 2 刀便可。
2. 手執一角,然後用菜刀大力拍→ 拖,
使豬扒的肉紋拍歪致面積更大。
用菜刀拍及拖的力度,使整塊豬扒面積平均增大及拍扁。
3. 放入鹽及胡椒粉醃一陣。
4. 用篩/茶隔輕輕均勻拍下麵粉於豬扒兩面。
再用手執起豬扒揚兩吓,缷下多餘的麵粉。
5. 薄薄沾上一層蛋液
6. 再上一層麵包糠,用手平鋪及輕壓上麵包糠
再拿起卸下多餘的麵包糠
7. 燒沸油→ 猛火下豬扒→ 中火→ 反轉豬扒→
再猛火→ 中火→猛火→ 上碟
8. 用厨紙墊底,吸去多餘的油份。
9. 用刀切開小件,方便進食。
General Consideration:
* 選用梅頭豬扒,肉質會較稔身;
建議買有骨的豬扒,肉質口感更佳。
* 若用急凍豬扒,則要 + 蒜茸粒醃肉,
但蒜茸宜用較幼細的,
否則炸起會有一粒粒燶的蒜茸沾上而影響賣相。
* 這個吉列煮法,可改用雞扒/雞柳/魚塊亦可。
* 無論是麵粉、蛋液或麵包糠都要薄簿沾上一層,
否則炸起便會有一層厚厚的吉列皮,並易於跌出分離豬扒。
* 使用油的份量,大約是炸物的兩倍半厚度;
可每次炸一至兩件豬扒,但新手還是每次炸一塊。
* 油炸豬扒:首先要熱鑊猛火,這樣才能緊黏住麵包糠。
再轉至中火;
臨上碟前再轉猛火,目的是再高温使多餘油份排出。
* 可配茄汁或沙律醬伴食。

吉列豬扒係難度之作,最忌外熟內生、又怕內孰外非洲!

我同意隱姐的話,炸嘢都係出街食,

炸時要控制火候.....
